By tapping a little hole and a pipe into it (which hip country folk, or at least us, know as Tappin’ The Birch) a Birch tree will share some of it’s nutritious juice. Attach an appropriate vessel and leave it for a few hours to fill up. This is possible for 3 weeks a year, just before the tree begins to leaf.
It’s watery but has a pleasing slightly sweet taste. You can make it into delicious wine by adding some gorse flowers and allowing it to ferment.
